A little taste of Finland

Kaurakeksit — Finnish oat cookies

We would have loved to offer you cookies. But since we’re in Finland, you’re getting kaurakeksit. Harder to pronounce, just as easy to eat.

Makes about 20 cookies · 15 minutes preparation · 12–15 minutes baking

Ingredients

Method

  1. Heat the oven to 175°C (conventional heat) and line two baking trays with baking paper.
  2. Beat the butter and sugar until creamy, then mix in the egg and vanilla sugar.
  3. Combine the oats, flour, baking powder and optional cinnamon, then stir into the butter mixture.
  4. Roll into about 20 small balls. Space them well apart on the trays and flatten slightly.
  5. Bake one tray at a time for 12–15 minutes, until the edges turn golden. Leave on the tray for 5 minutes before transferring to a rack.

Enjoy with coffee, and keep the crumbs off your keyboard.

Contains milk, egg and wheat (gluten).
